I agree completely, it absolutely should have been. Considering the airtime given to Meelo farting, consdering the airtime given to Varrick's shenanigans, it is a poor choice.
Also, given how much controversy the Unalaq/Wan/Raava/Vaatu storyline caused, I think a backstory on Sokka and Suki and how they built the Southern Water Tribe into what it became in the second season would have been amazing to see. But Mike and Bryan said they had a fairly average suburban life. Knowing Fandoms, there's always the (very high) chance people would subsequently go on an entitled rant about why did we have to see a bunch of boring day to day life in the southern tribe instead of XYZ (insert another possible bit of narrative)?
Also, plenty of other things weren't mentioned.
Mai wasn't mentioned at all. Ty Lee was never mentioned. Azula was never mentioned. Izumi's relationships weren't mentioned. Hakoda was never mentioned. Kanna and Pakku were never mentioned. Toph's baby daddys, for all intents and purposes weren't mentioned beyond "a guy named Kanto...didn't work out". There are huge holes in the narrative, which are ultimately sad to all of us, but it doesn't necessarily mean anything.
Some things just weren't able to be fit into the narrative. And we may have to live with that.
