Himelstein has made a number of guest appearances on television throughout his career, beginning in 1999 with the series Cupid. This was followed by appearances in, among others, Significant Others, House M.D., Journeyman, Do Over, Community, and four episodes of Doll & Em. He also began appearing in the series Joan of Arcadia in 2003, playing Friedman, Luke Girardi's best friend, and would ultimately appear in the series until its conclusion in 2005.

Himelstein is perhaps best known in film for playing a younger version of Austin Powers in Austin Powers in Goldmember in 2002, which followed an appearance in High Fidelity two years prior. In 2006, he appeared in Fast Food Nation, Down the P.C.H., and All the Boys Love Mandy Lane and had a part in Remember the Daze alongside Amber Heard, Alexa Vega, and Leighton Meester a year later.
